@worth1I’ve got something here in the jar that might work nicely in that Peri-Peri sauce. I’ll have to pick up some Evan Williams. I have a little Elijah Craig on hand at the moment. Never got into Jack Daniels.

This Aji Cristal, C.Baccatum peppers aren’t quite as hot I don’t believe, but that’s okay, they are fruity. I may have some Tabasco peppers out there pretty soon and that’s another C.frutescens. Anyway, seems like all these peppers at some point become interchangeable if one stays open minded about it. I like things fairly hot, store bought medium or occasionally a hot version of salsa. Tapatio sauce is hot, but I love that level of heat.
