When to harvest already-mature horseradish

Assuming you already have mature plants, and that you have plants to spare, can you harvest horseradish roots any time of year, or do you have to do it in the fall as per the normal recommendation? The man who gave me my initial roots thought spring was a good time to harvest them.

I don't know if it's right for this thread. But I am interested in what recipes you know to preserve horseradish (paste, etc.) and also some recipes to use (sauces, etc.).

At the farm, we always harvest horseradish in spring. It's a good time also to 'regroup' a weedy patch.
Yea, bring on the recipes!

Fresh grated horse radish has a sweetness to it. One xmas I put a bit of that on top of the cranberry sauce. It looked like snow and added some zip to the cran.
The best horse radish I bought used to have mustard oil as an ingedient. I think, to increase the heat.
