Bitter peppers

Bitter peppers
Hi everyone,
I've been growing Korean Cheongyang peppers (mild and green), kind of like a skinnier jalapeno. Recently, the plants have been crazy productive but the peppers have developed this bitter taste that's quite unpleasant. Some Googling suggests that underwatering might cause bitterness in sweet peppers and/or as these are picked green - the bitterness is from them being not ripe peppers. However, I've been harvesting these regularly since April and it's only been the past month or so when they started to be become bitter, so those explanations don't really make sense. I haven't had any major changes in watering/fertilizing.
Does anyone have any idea?
