Bonus green onions

One of my favorite varieties of onions is Ailsa Craig, but they have limited storage life. By February, they are starting to grow green shoots. So this year, when I spotted growth, I moved a bunch to a shallow container with diatomaceous earth granules, with enough water to just cover the granules. And I'm keeping them in plain sight in the living room where I can remember to use them up as needed for green onions or chive substitutes. I may douse them with some mild fertilizer to see how many cuttings I can get. Other years I ended up discarding them as they grew and started to get too soft.

You could grow your own seed from those, Dee! Just plant em up in a pot and tuck em outdoors in spring - meanwhile you can eat all the green onions you like.
I have grown leeks for seed in the greenhouse, after chopping them back to a stump. By the time they're ready to flower, they can go outdoors for pollinators.

Good idea, Bower! I would not have thought of that. I buy fresh Ailsa Craig seed every year, and could just as well grow my own, one or two plants in pots would be plenty!

We never toss a sprouted onion. Just let it grow until it has used up almost all of the bulb and use it as a green onion for cooking. Sweetest onions make the sweetest scallions.
