This is a Rosita and An Rosa Bianca, the plants look healthy but the leaves are very odd.
Any idea whats going on? Spider Mites?

It is odd. The speckling does look like damage from some kind of small mite.
Nice lady bug larvae!

It does look like mite or a bug that sucks juices but maybe that’s why the ladybug larvae is there.
I wouldn’t worry too much. Eggplants are tough and handle pretty serious bug pressure during summer heat without much problem, at least in warm climates.

I too guess that it is mites. The ladybug larvae that is there should hold them in check.
