I am trying to save seeds for tomatoes that I had bought from Costco. They are the variety of cherry size tomatoes. It’s day two and I don’t see any seeds on the bottom. Does that mean there are no viable seeds?

No it doesn't. Fermenting takes time for the seed coat to be dissolved. Once the seed coat is gone then the seeds will fall. I ferment my seeds for 5 days. A mat of mold usually form on the top by then and when that fully forms the seeds should be ready.
