Baked Eggplant Casserole A La Morrison's Cafeteria.

1 large or 2 medium eggplants (about2 1/2 pounds)
5 strips (5 ounces) bacon
1 large onion, diced
1 stack (from the four stacks in a standard box) saltine crackers (Ritz)
1 large egg
1/2 cup evaporated milk or half-and-half
salt and pepper, to taste
1 cup grated Romano

Dissolve 2 Tbs. salt in 1 quart water. Bring this to a boil in a large saucepan.

Cut the eggplants into oblong dice about two inches long.

Lower the heat in the saucepan to a simmer and add the eggplant. Cook until the eggplant pieces are distinctly limp. Drain the pan and set the eggplant pieces and the saucepan aside to dry a little.

Slice the bacon into pieces the size of your fingernail. Put the pieces into the saucepan, and set the heat to medium. Cook the bacon just until barely crisp. Remove the bacon and set aside in a large bowl.

In the remaining bacon fat, cook the chopped onion until it's translucent and soft.

Crush the crackers into big crumbs. (A food processor gets this done perfectly.) Add the crackers, eggplant, bacon, egg, and milk to the saucepan. Stir until all the ingredients are well mixed. Add up to about a quarter-cup of chicken stock or water, enough that the ingredients are very wet, but not enough to form puddles at the bottom. Also add salt and pepper to taste at this point.

Load the mixture into a two-quart casserole. Sprinkle the top with the Romano cheese. Bake the casserole at 400 degrees until bubbles begin to come up and the top to brown--about fifteen to twenty minutes.

Allow the casserole to cool for a few minutes before serving. It should be distinctly hot, but not enough to burn your mouth.

‘Chinese Buffet’ Green Beans

We used the yard long beans for this as they cook faster and have a slightly different flavor than regular green beans. They were fantastic with tiny bits of char on them from the wok! A very quick and easy recipe.

‘Chinese Buffet’ Green Beans

1 TBS peanut oil
2 cloves garlic, thinly sliced
1 lb fresh green beans, trimmed
1 TBS white sugar
2 TBS oyster sauce
2 tsp soy sauce

Heat peanut oil in a wok or large skillet over medium-high heat.

Stir in the garlic and cook until the edges begin to brown, about 20 seconds.

Add the green beans; cook and stir until the green beans begin to soften, about 5 minutes.

Stir in the sugar, oyster sauce and soy sauce.

Continue cooking and stirring for several minutes until the beans have attained the desired degree of doneness.

Well, I’ve never made anything like the casserole so we’ll see how that goes, lol.
Beans sound really good, too if I can figure out how to limit the salt a bit.

[mention]PlainJane[/mention], I made a half recipe for just us. The Ritz in the box I have are packed in these mini tubes with 13 crackers per tube. 13? I wonder why 13. Whatever! I used two tubes or 26 crackers for half of a recipe. Just an FYI.

Because 12 is an even number 13 is an odd number.
Two people get 6 each and the leftover cracker is for the dog.
That and it's a prime number.
