I was contemplating on what I wanted to eat for supper tonight and thought I was going to have to thaw out something.'
Then I remembered I had a wee bit of black beans from that deal.
Plus I couldn't eat all of my spaghetti and red chili I made last night and it was in a plate covered in the refrigerator too.
Turned the black beans and bacon into retried bean dip and warning up the spaghetti and red chili.
So it will be the above with corn tortilla chips for some seriously cheap eaten.
Its early but after that I'm hitting the sack to read a book pet and hug my cat and pass out for awhile.
Got a lot to do tomorrow and a lot to think about tonight and need to get up early.
Making sausage on the mind and I'm cold.
Mentally and physically beat big time.

I finally got to make a decent dinner this week. Grilled pork tenderloin marinated with garlic/jalapenos stuffed olives, capers, red pepper flakes, garlic, lemon and a touch of white wine. Au Gratin potatoes and a salad. These tomatoes are really sweet and nice in the winter. They are carried by Costco - Flavor Bombs by Sunset. The olives are amazing. I opened the jar tonight. :o

The pork tenderloin looks cooked to perfection.

By the way I slept for almost 11 hours straight uninterrupted. :D

Fry minced pork on vegetable oil with occasional stirring until light brown. Add spicy pickled daikon, leek, spring onion, ginger, garlic, fry another five minutes, move to the side of the wok. Add more oil if needed and fry doubanjiang and hoisin (3 to 1) in it with stirring. After 5 minutes mix all well and stir for a couple of minutes more. No salt needed. Serve on noodles.

This is my version, there are others. Different regions of China use different soy pastes. Doubanjiang and hoisin are the only ones I can get here.

My brother came in yesterday for round one of Xmas, we had ham glazed with pecan pepper jelly, cornbread dressing and greenbeans. I didn't get many pics except a few from the ham. Leftover ham was served with biscuits for breakfast too and there's still enough to make sandwiches while we wait for the rib roast to cook later. The bone and some random ham chunks are in the freezer for blackeyes for New Years!!!

This is what I scored yesterday - chunk of salmon nearly half price. Fish on special can be a bad idea, but you can see the fat is still white on this piece, and indeed it was good to go. Three steaks cut for about $2.60 apiece, which they regularly charge $6 each for. Fried in olive oil, doused in salt and drowned in lemon is how I like it best. The lighting in my kitchen is pretty dim, sorry bout the image quality. Those are my own tomatoes still in primo condition after being picked Halloween. My greens too from the basement under lights. The spuds are Norlands - gift from my friend's farm, oven fried, salt and vinegar. Yum.

The salmon looks very good and a great price.
I had a very good friend in Alaska that was a commercial boat captain that had all things salmon.
We spent many hours talking about smoking meats cooking canning and so on.
His smoked red sockeye salmon was out of this world.

I don't have a recipe for this.
It is at the other site I think buried way back.
It is a habanero manzano pepper potato onion celery clam chowder I had in the freezer from when I made 22 quarts of it.
I just cooked and added more diced potatoes when I warmed up a bowl.
Here it is in one of my new large one quart serving bowls I bought yesterday.

After wrapping, gift bagging, and gift boxing what felt like a mountain of Christmas presents last night I was thinking we needed an adult beverage thread. I passed on having one, took some ibuprofen and went to bed.

Supper was a salad.
