Cured Poultry.

The amazing chicken breasts I cured the other day I thawed out dried and sprinkled a little black pepper on them.
They are now in the offset smoker with just enough coals going to create a wee bit of smoke, I mean not hardly any smoke at all.
My guess is the temperature where the meat is located is around 130 to 140 F.

Decided to make a new to me sauce to brush the breasts with.
Also took apreviously smoked pork belly from the freezer and cooking it.
The sauce is brown sugar, polar soy sauce. lime juice and my fermented ghost pepper sauce.
Outstanding flavor.

i liked the potato salad and elote best.
Chili powder mayonnaise and the cheese.
You can't even tell it is mayonnaise.
