Yep another experiment.
Looked at different styles and or seasonings and just came up with what I liked.
Used cilantro too.
Allspice.
Garlic
Thyme.
Onion.
Salt.
Black pepper.
Chipotle powder.
Clove.
Nutmeg.
Fresh ginger.
Fresh squeezed orange juice.
Lime juice.
Brown sugar.
Vinegar.
Home roasted Brazil nut oil.
My fermented habanero sauce.
The flavor is absolutely amazing.
The meat is in a big bowl taking a swim as we speak.
Chicken is spatchcocked.
Pork is the butt rib things.
Marinade looks like green grass washings from a lawnmower.
Not one to stand on tradition I just dreamed it up.
Going to cook it on the new grill.

This is working nicely.
Taste tested a fatty piece of pork i cooked in the coals resting directly on the wood.
It was unbelievable.

I forgot I added cumin too.
Totally forgot about it.
Did I mention cinnamon. :lol:
I have no idea what jerk meat is supposed to taste like.
Never had it before.
I have watched videos of authentic Jamaican jerk and they all seem to be different.
Just like our BBQ.
I did manage to make something that one spice doesn't overpower the rest and at least to me it is unbelievably good.

My friend asked me how much it would cost to have one built and I said in a split second at least $3,000 and not a penny less; maybe more.

Beating a dead horse here but I want to add.
The breast was not dry by any standard.
Succulent and juicy.
A huge surprise to me.
I'm having some slices with wedge salad tonight for supper.
Still can't get over that green chicken on the grill. :lol:
