I made a Keralan style stir-fry tonight, to use up some mushrooms and bell peppers I had. I served it on a mix of brown rice and millet - something I do a lot, to add some nutrients to rice. The recipe was based on this one:

I doubled it, and added more garlic and more hot peppers, as usual! However, just those 5 Thai peppers could have been reduced to 3 - that black pepper is surprisingly hot, in this amount. A friend who was trying this with me thought that it wasn't that hot...until a few bites into it, and it grew on us!

It does look good. :)
I broke down the other day at lunch and bought a 10 piece fried chicken box at Golden Chick.
It came with a giant family sized box of fried okra too.
Cost was a little over 10 dollars but I got a sweet tea to go with it.
Ate some for lunch and am warming up the bird and okra for today.
Gonna re-fry both of them with extra spices (garlic red pepper) on the chicken after it is hot.
Starving after that 2 mile walk in the cold this morning. :lol:

I just had a giant 4 egg omelet with easy melt cheese homemade bacon and a good dose of the Herdez mild
guacamole salsa.
With a side of my pickled beets.
The pickled beets went so well with the dish, it was amazing.
I have to say I keep finding more and more uses for this Herdez stuff.
Cant say enough good about it.

Cooking the shrimp heads and hulls in salted water.
This will be sifted /strained and the water used to cook Jasmin rice in.
Shrimp will be cooked in 2 sticks of butter that has allowed the solids to caramelize under low heat.
Spices include in the butter.
Chili powder a hand full.
Teaspoon of powdered red hot pepper .
Teaspoon of ground celery seeds with some salt.
Teaspoon of black pepper.
Teaspoon of cumin.
1/4 teaspoon of fennel seeds.
6 fresh bay leaves.
All of the above excepting the shrimp scraps is cooked in the butter at low temperature so as not to burn it and draw out the flavors.
Starving, all I have had to eat today is a Bear Claw.

I started watching Pitmaster X's onion soup video last night but couldn't finish so today I saw beef shanks and bones marked down and BAM! I'm roasting the shanks and bones now for a soup tomorrow. I feel compelled to try this recipe, it looks so good. I have homemade beef broth in the freezer so it should go as planned except I don't have bread, HMMMM. I'll come up with something, maybe a freezer raid.

I finished the soup last night and had to try a cup, the beef flavor is awesome!!! I didn't have bread or the right cheese so I used mini Club crackers coated in a little EVOO seasoned with Cavenders with Mozzarella, Provolone and fresh grated Parmesan. I have the rest in the fridge chilling so I can remove the fat today.

I dont know what I waz thinking.
Made seafood chili wasn't going for that.
Anyway it was good but way hot.
Manned up and ate it anyway.
Should have cut way back on chili powder and hot red pepper.
Getting good at these rice moulds though.
Used shrimp and catfish.
