I've been going through this fish sauce pretty fast.
I'm using it as a salt replacement.
No reason to refrigerate really.

If you don't use it quickly, it's a good idea to refrigerate, as the flavor will deteriorate. I also keep oyster sauce, and Chenkiang vinegar refrigerated - two other ingredients that will be ok if used within a few months, but won't keep like soy sauce or Worcestershire sauce at room temp.

I'm down to less than half a bottle..
But I'll refrigerate it.
I just wish I could get my hands on some garum that's supposed to be not as salty.

I was tempted to buy them.
I could make a diluted fermented hot sauce with them with lime and sugar.
What could possibly go wrong.

Since I don't tolerate hot peppers much, I did get seed for the no heat habanero's and bishops hats, all the flavors but not the punishing heat. Pretty good, nice to be able to taste the other flavors there not masked by the burning.

It's really depressing going into our local HEB these days.
40 dollars for a ribeye steak.
Seriously.
That and they're aren't through with the remodeling.
No meat counter or anything to get meat cut.
I mean the place gets worse every time I go in.
