Then, when the flames have reduced to hot coals and embers, we'd put a cast iron (CAST IRON!, when will we start a thread on that?) dutch oven of REAL New England clam chowdah over the remaining heat, and enjoy ourselves.

Now shrimp chowder, that has a history of blending New England and gulf states cooking. Hot peppers are welcome, there.

#5 - chicken soup (with meat tortellini)

Absolute survival food. When I'm sick and can't keep any solid food down, this is #1, as I survive on the broth for several days.
It's aptly named "Jewish penicillin".

#6 - chicken cacciatore. I could almost have a top 10 favorite foods entirely of Italian dishes. This one tops them all.

Looking at #5 and #6 , the common theme isn't so much the chicken, it's the small amount of chicken fat that flavors the food.

#7 - stuffed cabbage (Golumpki in Polish). Probably the most addictive meal I cook. It doesn't help when I roll up , bake and then freeze, 100 at a time.

#1 and #7 on my list have cabbage as a theme. To think as a child I didn't like cabbage.

#8 beef stew - A bit different than the norm, my recipe calls for some apple cider and cinnamon.

#9 - Swedish meatballs (over extra-wide egg noodles). Another one where I make them 100 at a time, and freeze them away. Almost as addictive as the Golumpkis, but not quite.

#10 - mac & cheese (baked, with bread crumb topping). As simple as it gets. I'll show my age by saying, this is the only meal I would ever order at a Howard Johnson's.

Correct, or maybe I'm a slave to them. There is no such thing as too many, I have 5 different trees, and it's just my husband and me. Might not stop there either. And... it makes Summer bearable when I can't grow tomatoes and have to see all you all's tomato photos!

[mention]worth1[/mention] Lox might be my favorite food. Salt, sugar and herb cured salmon is the bee’s knees whether it is smoked or not. I’ve made my own cured Lox. It isn’t hard to make if the refrigerator has enough space.

Not generally cold enough in my part of the state to cold smoke anything and cold smoked salmon is a completely differently animal from the hot smoked version.

I haven't had it for a while, but I used to eat nova years ago, when my friend from college still lived in this area, and he would buy the nova and cheese, and I would make the bagels! We actually made some cream cheese a few times, too. We made the lox, too, but it wasn't quite as good as the stuff from the store.

I love so many things that I can't even make a list but if fat grams and calories don't count then I will put fried chicken and fried seafood at the top of my list.

Okies, here goes

1) It's a winner, chicken dinner. Sunday roast dinner with roast potatoes, five veg, stuffing, Yorkshire puds and gravy and cranberry sauce.
2) Fillet steak and pepper corn sauce, baby sweetcorn, broccoli and cauliflower (could be in cheese and breadcrumbs) and something with potatoes, chips, sautee, mash etc.
3) slow cooked gammon in cider, caulif!ower cheese baked, crispy roast potatoes and any selection of 1 or 2 seasonal veg
4) slow cooked lamb shanks or leg of lamb as above
5) chilli and rice or air fried potatoes wedges, salad and sliced avocados drizzled with iliada kalamata Olive oil, balsamic vinegar from modena and so fresh tomatoes. A few pine nuts in the salad if feeling extravagent.
6) Thai green curry , home made or beef penang. Get those spices out.
7) sausage casserole and cheesy mash rebaked, selection of whatever veg is available.
8) curry in a hurry, take out from local Indian restaurant. Non cooking night.
9) homemade pizza dough, make the topping as you like. Fun for kids.
10) Spanish chicken, roasted with mixed peppers, chillies, chorizo, red onion and lashing of cheese.

Backup option

11) pasta and tomatoes, too many variations to mention.

And finally, all the above, either with your loved one, with family or with friends - you choose the right dressing to make the meal.

My lovely wife did remind me about 'what would you like your last ever meal to be' whilst compiling this. This would be a very large buffet. I figure I could stretch it out as long as I like....

[mention]worth1[/mention] chilli for us is slices of beef and beef mince in a tomato sauce, perhaps some tomato paste, onions, hot chilli powder, fresh chillies, peppers, fresh black pepper, fresh garlic, paprika, diced carrot, sprinkle of 'erbs, red kidney beans, a small square of dark chocolate (adds gloss and a richness), a slosh of the wine you are going to drink with it and I like some coriander to top. Soured cream is a must as a side, avocado, salad, and lashings of cheese (strong cheddar and parmesan or parmareggio)

Jacket potatoes or wedges or rice

Enough for second day is a must as this is when it is at its best!

What both of y'all are making is chili con carne with beans.
Chili is the Mexican word for peppers and carne is the word for meat.
Go ahead ad your beans and other stuff in but for gods sake put enough chili powder and other spices in it to taste like chili.
Also something neither one of you might not have is masa harina to thicken it.
Masa harina is dried masa aka corn flour not to be confused with what we call corn starch here in the US but in the UK they call corn starch corn flour.
When the big run on food was going on you could still get the stuff here in many brands.
I use chili powder paprika cumin garlic powder onion powder if i have it, if not deiced onions real fine Mexican oregano salt chili arbol dark coco powder sometimes and what ever the heck I feel like at the time.
For liquid I use what we call V/8 juice or the HEB store brand like it.
Sometimes other types of chilies ground up since my market has all kinds to pick from.
Usually I use ground/minced chuck or ground brisket run through a 3/8 to 1/2 grinding/mincing plate.
I think it is 1/2 inch.
Some of my plates are metric so I use the equivalent of.

[mention]worth1[/mention] loving the precision. I'm not sure I could differentiate between 3/8 to 1/2 . Although in later years I wish I had your engineering expertise which is why I am loving your grill making. We do have corn flour in the uk, and during covid it was in abundance as most folks just use it as a gravy thickener. I am one up on them as I can use it also as a light batter too ! Gonna try adding a touch of cumin as love this spice too. Not sure I could remove the beans but my wife could, she always leaves a little pile of them stacked on the side of the plate :-) because of her diabetes.
