It is homemade beef sweet Italian meatballs with scrap spaghetti and fettuccine with cheap store brand Alfredo sauce.
The meatballs were-----.
One pound ground chuck.
A goodly dollop of ground fennel.
An egg.
Corn starch.
Black Pepper.
Salt.
Mix let set mix let set mix.
Cooked at 160F for 15 minutes in hot water.

I like your Ramen soup. I "boil" my eggs, one dozen at a time in my instant pot with one cup of water. I have the timing down perfect at three minutes cooking, and three minutes natural depressurizing. After five minutes in an ice water bath, the shells almost fall off. I don't like my eggs hard boiled with a green ring around the yolk. I prefer them boiled soft, but firm. We eat a lot of boiled eggs in everything from soup, to salads, to potato salad, to egg salad sandwiches and quick and easy snacks.

Our daughter bought enough home made tamales to feed seventeen people Christmas dinner. We had beef, chicken, and cheese with jalapeno strip tamales. She bought enough for everyone to have some for take home. My wife and I have eaten tamales for dinner three nights in a row. Tamales with chili sauce, tamales with beans and chopped onion; and tamales with cheese sauce and salsa and a large green salad. I'm about tamalied out. They were great, but I'm looking forward to our air fried chicken thighs tonight.

I also like your turkey sandwich, but what really makes it look so delicious to me is all the fresh veggies stacked on it. For some reason, my taste buds have shifted from lots of meat to lots of veggies on sandwiches.
Your beans and sausage also look very good, but my favorite is bacon strips cooked over the top of the beans.

The homemade bacon was cooked in the beans before hand.
The sausage was cooked on the offset smoker and cut up after the beans were cooked.
Trying to whittle down Christmas dinner leftovers.

Made up my mind on what I was going to have for supper on the way home from work.
I have a little ground chuck left over and was going to make some sort of beef cheese macaroni thing then it hit me.
I have some tortilla chips and the rest of the fixings and am gong to have a so called taco salad.'
This is why I keep so many spices around and the vast amounts of chili powder.
I don't have to go to the store and buy a salty expensive mix.
I make them myself to may taste.
The corn tortilla chips were a little on the damp side from the humidity so they are in the oven on low drying out.
Just tested one and they are just as crispy crunchy as the minute they came out of the deep fat fryer.
For this meat seasoning I use.
No measurements of chili powder.
Cumin.
Mexican oregano.
Salt.
Honestly tastes the same every time.

DH put chicken, mushrooms, pasta, cheddar, and cream cheese & maybe something else in the pressure cooker thingy (like an Instant Pot). Heavenly! I ate too much.

Sucked these puppies down like a whirlpool on steroids.
Dipped them in the avocado green sauce.

Peasant style.
Getting there been up since before the sun came up.
So obviously no hangover from last night.
Went to bed like a good little boy and didn't even get woken up by the fire works going off.
In pictuers soon to come you will see the black-eyed peas are ready.
Cooked them in the juices of the tasso like ham product I simmered for quite some time.
Next will be the smoked trotters starting to simmer in water till almost falling apart and cabbage will be added to cook the rest of the way.
The cornbread is cooked and ready.
Later you will see the candied sweet potatoes I cooked in brown sugar with cinnamon and clove added.
These are (((NOT))) your disgusting canned yams we all seem to love and hate at the same time.
They will have a topping of the disgusting marshmallows.

Under those marshmallows are the best cinnamon clove candied yams I have ever had in my life.

Looks good and tasty! It's not your typical New Years food but it works.
Next time you make cornbread you can use some of the bacon braids to flavor it up!!

I was so sick of smelling smoke I wanted to just put it away.
Then the great syrup flood in the oven didn't help matters either.
My favorite was the candied yams.
Got plenty to eat tonight though.
