My pressure canner calls for 2-3" of water in it and the jars did not float. I used pint jars.

I guess I should have bought pecans when they were cheap and put them away.

I usually get all I want from the trees of a friend. Unfortunately this year H. Helene blew off all the pecans prematurely while they were still green. Last year was the off year so this year was supposed to be the producing year. And I'm completely out. Of all the years to have a swing and a miss.

I think I'm going to stock up on walnuts they're cheaper by almost half.
Walnut pie for thanksgiving cooked in the style of the Steen's cane syrup recipe for pecan pie.
