Pork bellies aren't available here that I can find. Would a Boston butt cut up work OK?

I'm sure you can use PB but you'll have to add more more fat/liquid when wrapped to keep it tender and cook it in less time.

[mention]mikestuff49[/mention] , I’ve never tried it using a pork shoulder. Like Rajun said, I’m sure you could, but I’d bet the cooking time would be a lot shorter since that cut is a lot leaner than a pork belly. Give it a shot!

I can't believe you can't find a pork belly in the Ozarks.
I bet some good country folks have them.
Probably at a price right now though.

Actually, I have been better. But to offset the miseries, I'm growing again! You know my "garden" is problematic so who knows what I'll get, but at least it will keep me entertained.

So what about you? You got your wonderful pot garden going again this year? My glog is running again at C2CPeppers. Pam says hi.
