I didn't realize that eggs were used so much in Mexican cooking. I know huevos rancheros, and a few others are classics, but I didn't know they used so many of them. Did eggs become a main source of protein, with the high price of meats? Seems beans would have increased a lot, instead of eggs, though eggs are more of a "complete food".

They could be selling under the counter tacos for all I know.
Egg potato and cheese is popular.
I also forgot potatoes too.
One woman filled her cart up with potatoes.
Probably 10 8 pound bags.
Said her family ate a lot of potatoes.
And yes beans too.
But eggs everything has eggs.
If I eat from a food truck it's going to be an authentic Mexican food truck.
They always have corn or flour tortillas and if corn you get two layers of corn tortillas not one.
That is traditional.

I actually splurged today, and bought an Angus beef bone-in prime rib for New Yeas Day. It was marked down from $10.97/lb to $4.72/lb, saving $50.

I have four days to find out how to cook it. :oops:

I needed an onion and saw that I needed to open another sack.
Darn I'm on my last sack I need to get more onions.
Then I go to the garage to get two potatoes and there are two more unopened sacks of onions.
I almost had a nervous breakdown thinking I was almost out of onions.

When I was a kid my mom would send me to get onions.
The darn things were stored in the barn in hay almost a quarter mile away.
In the winter it meant I had to go after dark and there were vampires out.
But by darn I gotta get them onions so off I would go.
Tracking through the snow.
With a sack.
Looking behind my back.
For vampires.
During a full moon.
All I saw was a fat raccoon.
Looking back.
At my onions in a sack.

I assumed they didn't have garlic, if he had to worry about vampires. Or at least not enough of it.

Where oh where did the peanut butter go? I like a good PBJ once in awhile and I haven't seen Peter Pan peanut butter on the shelves here in months. Jellies and jams are scarce too. The good old standby for mom's and kids as well as the poor is hardly found on our shelves these days. My daughter can't find her blackberry jam so I found one jar for her stocking this year.

One thing I do every year is to make jam or jelly in bulk before Christmas, for family and friends. So much better than what you can buy, at crazy prices like $5 or $6 bucks for a small jar less than a pint.

I just discovered a blackberry farm up the road about 10 miles from me.
As far as peanut butter its hit and miss around here.
I've been buying the store brand because it has less ingredients than the usual stuff.
I can also grind my own at the store as well.

Peter Pan had a huge recall several months ago. Restocking, here, started about a month ago.

I saw a list of recalls recently (in Canada) and when I read the details, it was all because they were found to contain milk or eggs that wasn't on the ingredients label. So there was actually nothing wrong with them, unless you're allergic to milk or eggs.

I heard they recalled a peanut brand because they didn't have the warning that they were processed in a facility that processed peanuts.
