My sister is on a bread baking kick, like the rest of the world, and I am about to have a lot of tomatoes that need using up.

So what are your tried and trusted tomato bread recipes?

I have never really made a tomato bread, with all those breads I've made. I put them on sandwiches, or things like pizza.

So why would you think of bread, to use up a bunch of tomatoes, instead of sauces, freezing, drying, and the usual things? Bread you are going to have to freeze, if making a lot.

If tomato bread is anything like Irish Brown Bread, I’m in. That bread is fantastic, but I’ve only had it in Ireland. We’d probably just mess it up over here.

My wife made some zucchini bread with garden zucchini and it was great. I’m intrigued how tomatoes might be incorporated into a loaf of bread.

This is my favorite. Great way to use green tomatoes, or immature ones where a bug got to a piece of it. It's very similar to a banana bread, delicious.

I would think you could add bits of dried tomatoes in something like a cheese and onion bread. Fresh tomatoes might be too wet.

If I thought to try it, I would just substitute blender-liquified tomatoes for some or all of the liquid in a bread recipe. I've used them that way in savory muffins, and it was nice, although TBH the tomato presence was subtle. The savory muffin concept was touted by parents as a way to sneak vegetables into the kids' diet. :lol: Any veg could be used.
If you wanted the tomatoes front and center in the bread, sundried bits would work. I've had bread made that way (not by me, commercial bakers).

My favorite bread-&-tomato dish is nice slices of homemade bread, toasted lightly, drizzled with a bit of extra-virgin olive oil, slices of tomato, fresh mozzarella and julienned basil run under the broiler until the cheese is good and melty. Another little drizzle of EVOO and it's tastebud nirvana time.

Now I want to make tomato cornbread. Never have, but I think it would work. The tomato acids might interact with a cast-iron pan, though, without neutralizing them first. Glass might be better in this case.

With a well seasoned cast iron skillet I wouldn't concern myself one bit.
The very idea of making cornbread in a glass pan is like well putting ketchup on a Wagu A5 steak. :lol: :shock:

I make tomato bread from cherry tomatoes. The oregano makes it taste a little like pizza. The yeast seems to love the tomatoes, the bread rises remarkably. I'll be making this soon, after I finish my current loaf of pumpernickel.

2 1/2 cups all-purpose flour
1 cup whole wheat flour
2 1/2 tablespoons dry milk powder
1 1/2 teaspoons salt
3/4 teaspoons oregano
2 teaspoons yeast
(optional) 1/2 teaspoon marjoram
(optional) 1/2 teaspoon dry mustard powder

2 cups cherry tomatoes or quartered Roma tomatoes roasted (see instructions step 1)
1 tablespoon extra virgin olive oil
3/4 cup warm water
2 tablespoons honey
1 tablespoon extra virgin olive oil

Instructions
1. To roast the tomatoes, spread them out on an aluminum foil-covered baking sheet and toss with 1 tablespoon
olive oil. Preheat the oven to 400 degrees F and roast for 10-15 minutes or until the skins of the tomatoes
are collapsed and just barely beginning to brown.

2. Put cooled tomatoes, water, honey and olive oil in a blender. Puree mixture.

3. Combine the dry ingredients in the bowl of a stand mixer. Make a well in the middle of the flour and pour
in the pureed tomato mixture. Stir with a wooden spoon or spatula just until the ingredients are starting
to come together, then attach a dough hook to the mixer and knead the dough for about 8 minutes on
medium ("2" on a Kitchenaid stand mixer). The dough will still be a little sticky and tacky. If it's too wet,
add a little more flour. Remove the dough from the bowl and roll into a ball.

4. Lightly oil a clean bowl with oil and roll the dough ball around in it. Cover loosely with plastic wrap
and let rise in a warm area for about an hour, until doubled in size.

5. Punch the dough down and let it rest for about 10 minutes. Transfer to a greased loaf pan, loosly cover with
plastic wrap and let it rise 30 minutes to an hour.

6. Preheat the oven to 350 degrees F. Bake for 40-50 minutes or until the top of the bread is browned
and the loaf sounds hollow when you tap on it with your knuckles. Bread is done when the internal temperature
is 195 to 200 degrees.
