Fully vine ripened necessary?

I'm growing 4 types of squash this year and most of the vines are now being eaten up by powdery mildew. I've got some leftover kohlrabi seedlings to drop in wherever I can open up space and I'm tempted to pull the vines.

But there are still squash on the vines, including some newly set ones. I know the babies probably won't be worth keeping, although I can try them like zucchini, but what about the squash that have just started turning color? I generally leave squash until they've fully colored and I start to see the stem starting to brown a little, but there probably isn't enough life left in the vines for that, at least for some varieties. If a squash doesn't fully turn (or has just turned) and you harvest it and let it sit to finish turning color and cure, will it still be as good?
