gills sugar hubbard vs mountainer hubbard

i ordered mountaineer hubbard squash from sandhill preservation this year.
seeing early, and prolific in the description always catches my eye when i am
looking for something to grow in the garden.
we also grow sugar hubbard as we love how it tastes.
mountaineer was indeed early, and prolific. we had about the same number of plants
as sugar hubbard. it was a 3:2 ratio of mountaineer to sugar hubbard at harvest.
we have baked both of them and compared them, and have found we much
prefer the sugar hubbard squash. mountaineer is decent enough, but we don't
find ourselves going back for second or third servings like we did with the sugar
hubbard we ate last night.

we baked a third mountaineer today, and it had a better taste than the first two.
if the rest of them have the same level of taste, i'm good with it. having at least
a hundred pounds of squash to eat through, the first two were underwhelming.
sugar hubbard is still better, but mountaineer has closed the gap a bit. i wonder
what could cause the flavor inconsistencies?

Some varieties of winter squash have peak flavor a few months after picking.

Yeah same as I was thinking, I prefer butternut in February...it really develops the flavor by then.
