WW bread - first one of 2021!

I baked my first loaf of 2021 bread today - a WW bread, with some oat bran and a few flax seeds. A couple days ago I ground up a new batch of hard white wheat, and that gave me the idea for the bread. Started with a soaker and a biga the night before, and finished a little over 12 hours later.

Looks terrific! Makes me hungry too!
There's a recipe online that I love because it's delicious and easy, for artisan multigrain bread, without any kneading. Has quinoa, sunflower nuts, and oats. It comes out so perfect every time.

Would you provide the link to that bread? I'm always trying out new whole grain bread recipes. I make all my breads with sourdough.

[mention]Ginger2778[/mention] I used the recipe you linked to, didn't totally follow the instructions, since I don't have a pizza stone, and my hand rounded loaves always seem to go flat! I just used two regular metal breadpans. But the taste was really good! So good toasted and buttered, with soup! Will make again. Thanks!

Dee, I've made it about 8 times, I always use a breadpan for one, and freehand the other. Both go on the pizza stone(which I adore)I do put the steam in too. I also double the seeds and oats now, and throw in 1/4 cup of pumpkin seeds. Love not kneading!
If you get a pizza stone you will find a million uses.

We love making bread also and experimenting with the ingredients. Last time, it was a rye-spelt-wholemeal flour-potato-onions-bacon-bread with all kind of grains in and around the loaf. We put it into baking paper with the ends tied up, but open in between, so that it's well crusted. Cut into a bit thicker slices, then butter and (perhaps) a bit of salt and it's sooo delicious! And never survives the second day...
