Perfect Eggs and sausage.

This is one i totally forgot about and as far as I know an original.
The original part is what I use to make them.
Large mouth canning jar rings.
Get griddle hot.
Crack egg in another container.
Oil inside of canning rings.
Put egg inside ring and hold down a wee bit til the thing sets up a little.
Repeat as desired.
Add a splash of water in griddle and cover.
Cook till desired.
Do the same with the sausage but just us a mold then put on griddle and cover.

The off-centered yolks got my OCD crawling immediately! :lol:
It's great way to cook eggs for sandwiches and folks have been using canning lids to do this for years, even for making mini-cakes on a baking sheet. Great way to do hashbrowns as well. I recall many years ago there were people discussing it and it turned into an arguement about which way to flip the lid. I'm on the side of the arguement that the way you are doing it is correct, top of the lid should remain on top!

Ahh, reminds me of one eyed jacks my 6th grade teacher taught us to make. We would take a slice of bread, butter both sides, take a drinking glass and cut out a hole in the bread. Put it on the griddle and put a egg in the middle of it and also throw the bread "hole" on as well. This was back mid 70's, days gone by

We call them "Toads in a Hole" ... not sure why, but when you mention that to others they know what you're talking about, at least in the Northeast US.

This is how I make poached eggs. I learned it from a friend who owns a McDonalds. They use a form for their eggs and the Ball jar lids do work perfect for this! It's a great idea and I'm glad that you shared it.
