Fish & Chips Texas Style.

Yep Texas style.
Made a homemade seafood boil and gave the shrimp a bath.
The boil consisted of......
Water.
Hot smoked Spanish paprika.
Salt.
Black pepper.
Homemade habanero sauce.
One whole lime.
Fresh Bay leaf.
Cumin.
Garlic powder.

Had three boiled taters in the fridge and put them in to heat up too.
Hot fresh oil heating.
Fish flipped in corn meal.
Deli pickles.
Fried jalapeño pepper.
Homemade fry sauce.
Malt vinegar.
Cut taters on wedges and fried them after a swim in the spice bath.
Ate the whole thing washed down with iced sangria.

I like to fry my fish on corn meal not a batter.
The corn meal is less greasy and doesn't act like a grease sponge like a thick batter does.
The bottom of my plate had zero oil in it from the fried food.
The trick is to use fresh oil.
I usually fry twice not more than thrice before tossing.
Big bubbles good small bubbles bad when it comes to frying.
That's what I keep an eye on.
That's why home fried food done properly is way better that restaurant oil.

Every other white fish is a substitute for cod.
A poor substitute to my taste.
Not a slur on your fine fish and chips texas style. But I'm fed up with substitutes for cod. Cod is amazing. Miss it every time it aint.

I like all kinds of fish (not necessarily all sources of the same fish), but I definitely agree that cod is amazing, among the highly flavored fish. My grandma fried some up for me once. I've never had fish quite like it. She liked halibut. After cod, I probably like sunfish, like largemouth bass, smallmouth bass, crappie, yellow perch, and bluegill most.

I like mild fish, too. Farm-raised catfish is great.

A fresh fish is a good fish, I'll say that.
I'm a bit fed up with the commercial substitutes for cod. They don't tend to be super fresh either, and if it's a bit oily. oieh. Spare me your haddock.
I do like halibut, haven't had any in years though.
Salmon and trout are favorites for their taste of course. But cod is truly delicious. What a tasty fish.
Had a taste from the food fishery this year, and even got some at the supermarket "3PS cod". Always nice to know where it came from, It was authentic by home authentication process :).
I don't mind strong tasting fish, I even love a fresh mackerel, but they need to be filleted before a day passes that's for sure, but if done and marinated in lemon juice and soy sauce, very satisfying food.

I watched a show on the destruction of the oceans ecosystem of the north east Atlantic due to over fishing the cod.

Yeah, overfishing is a huge modern problem. Huge. Not just cod, but almost everything. Fish farming, the way they do it (for most fish), these days, isn't sustainable, either. I mean, instead of selectively breeding easier-to-farm fish, businesses catch young wild fish and sell those to farmers (who raise them up and sell them--no breeding involved). Imagine if we only farmed cows or chickens we caught in the wild young.
