Banana Bread, made with overripe bananas

I made a banana bread tonight, with some old bananas, some WW flour, some raisins, walnuts, oats, cinnamon, cloves, and nutmeg, plus some vanilla extract and some coconut flavor. The liquid in it was some yogurt, and 2 eggs, and some of the bananas, and the oil I used was some coconut oil. It smells soooooo good, but I have to wait, to cut...

I made a loaf of banana bread today, with 4 very ripe bananas, and a stick of butter, browned, and WW flour, in a slightly smaller amount, instead of white flour. Since it was baked in the convection oven, it was on 300°, so the sugar the dough was topped with was still white, after it was cooked to 208-210°, so I caramelized the sugar with my propane torch! Ohhhh that smells good!

I did sample it just now, and it is delicious!

Before making the bread, I lightly roasted 2 lbs of chopped walnuts, I took from the freezer yesterday, and used some of those for this. I had to get started for those Christmas cookies!

I had some ripe bananas again that I had to use up, so I used one in a smoothie, and the other 3 in a banana bread. Here is the recipe. I added a little coconut flavor, which makes it even better, but of course, the chocolate is what makes it:

OMG is that stuff good!!! And gooey! I'll probably refrigerate it, to make it easier to slice, like my most gooey brownies.

I made another one of those Death by Chocolate banana breads, this one with 7/8c WW flour, in place of a cup of AP, and baked in the longer 2 lb pan, rather than the 9 x 5 pan.

I need to make something sweet for Christmas or just buy something.
Black forest cake sounds good but I'm not making one.

I made another loaf of Death By Chocolate banana bread - my way to use baking soda, for National Bicarbonate of Soda Day. Not that I needed that reason to make it again, but I had those bananas ready. And this is something good I can take over to my friend's place tomorrow night. I'll resist cutting it in advance.

I made a banana bread today, since I had 4 very ripe bananas I had to use soon! I based it on one I made a while back, from Milk Street, with brown butter and cardamom, but I added a little cinnamon, and some whole grain flours for half of it, plus I added a cup of toasted walnuts. Not quite as good as the "Death By Chocolate" banana bread, but definitely good.

I baked another loaf of banana bread today, since I had 4 very ripe bananas. I haven't cut it yet, but oh, that aroma! I'm sure I won't be disappointed.

Here's the recipe I used, with the only changes I made being using half Ww flour, and using a cup of walnuts, instead of 3/4 c, and toasted them lightly - something I almost always do, for nuts when baking.

Last night, after cleaning up from the dinner, I made another one of those Death By Chocolate Banana Breads, since I had 3 ultra ripe bananas, that I had to use, and this is the best one to make with those.

This loaf I made with yogurt, instead of buttermilk, which I was out of, and I put a tsp of coconut flavoring in, which wasn't really enough - next time, I'll use 2 tsp.

I baked a loaf of banana coconut bread, with a generous cup of roasted walnuts. The coconut is some fresh, unsweetened grated coconut, I had in the freezer, and saw the bag in there, when getting the nuts. I used a little more than half whole wheat flour (1¼c), and a half cup each of sorghum flour, and red lentil flour, and only 3/4 c palm sugar - those bananas were so ripe they almost looked like ripe plantains!

I love an over ripe banana.
If they aren't ripe with black spots on them they give horrible heartburn.

That's why I end up with those over-ripe bananas - eventually, they are too ripe to snack on, then I use them for smoothies, then in breads, when they are mostly black.

Just made some with my daughter. My recipe calls for white vinegar, and it is the most wonderful banana bread I have ever had.

I have everything but walnuts.
I drove in front of the store this day before Thanksgiving morning at 6:15 AM and the parking lot was already packed.
Mind you the store opens at 6:00 AM.
I can wait and the bananas will be ready.
I'm making some in a bundt pan.

This time I made Death By Chocolate, to use up 4 medium sized black bananas, and this time I added some walnuts, and some prunes, cut into thirds or quarters, depending on the size. I used half WW flour, and half white flour, and used an extra egg, and some crema (made almost 3 c recently, using the leftover heavy cream from Christmas), in place of the buttermilk or sour cream, for even more richness.
