Christmas Chili.

Suggestion in the foraging for food thread I got an idea.
This is not a bean dominant chili they are there in the background as an ingredient not the star of the show like the cheap stuff.
The measurements are approximate.
They include.
2.5 pounds of ground beef your choice lean or fatty
I like 80/20 because fat means flavor and it seals the top when cold.
A handful of Fiesta brand chili powder.
One handful of ancho chili powder.
Half handful of cumin powder.
Two tablespoons of cumin seeds slightly ground.
Two tablespoons of ground green cardamom seed pods including the green hull that got ground up.
Discard any hulls that don't grind up.
Same with coriander seeds.
One tablespoon or more of Mexican oregano.
One tablespoon of garlic powder.
One tablespoon of onion powder.
One tablespoon of beef bullion powder.
One 28 ounce can of crushed tomatoes and basil.
1/3 cup of New Amsterdam Stratusphere Gin not the London dry version.
1 cup of dry Romano beans cooked on the side with a little beef bullion powder and chili powder.
I highly suggest these or something besides pinto beans unless you just have to have pinto beans.
2 cups of water as the chilli cooks down and let it cook down.
After beans are cooked add them with the remaining liquid if there is any.
That's where some of the salt will come from.
Freshen the spices as needed at the last
Add your own favorite way to make it spicy hot.
Mine will be a teaspoon of chipotle powder and the same of hot smoked Spanish paprika.
Cook down until desired consistency.

I need to wait for the beans to cook and then I'll add a wee few ripe juniper berries at the very last.
Maybe 5 or 6.

Here it is your not so typical but flavorful chili.
It's in rest mode for later.
In Texas no Christmas is complete without our state dish no matter how you make it.
Just don't use ketchup for crying out loud. :cry:

We just finished off a big pot of a Tuesday vintage 4 bean chili yesterday with a pimento cheese sammich!
