I remember, possibly the mid-80s, here in New England, when BBQ finally took off. There was this BBQ place in Portsmouth, NH, said to be the best in the northeast. I went there with friends, got the full BBQ sampler. The brisket tasted like the ribs, the ribs tasted like the sausage, the sausage tasted like the baked beans, the baked beans tasted like the french fries. Everything tasted of their strong BBQ sauce. Looking back, I should have gone with some cole slaw and potato salad. It was the worst BBQ meal that I ever had. But, I wondered what everything would have tasted like without any sauce. To this day, I avoid BBQ baked beans, and BBQ flavored potato chips.

Let's get one thing perfectly straight first.
BBQ never was meant to be a healthy food.
Especially brisket.
Our dinner included brisket and it was the flat part of the brisket and there was zero fat and as dry as British humor.
They had turkey breast which doesn't belong anywhere near a Texas BBQ.
The pork ribs were mediocre at best.
Potato salad ok.
They had some sort of god awful corn that was like pure sugar with some sort of cream in it.
Their sauce tasted like syrup.
The tea was good.
The sausage was like a fake rubber sausage.

Not being ungrateful for the meal but it is what it is.
And a warning to anyone stopping at one of these places.

I was talking to a guy today about the experience and he said they don't call it the worst BBQ in Texas for nothing.

So I just gotta look.
Low and behold first thing that popped up on Google was this BBQ place.
Line after line naming this place.
They even sell tee shirts with it.
So if you're in Texas and want to experience the Worst BBQ in Texas then look no further than drum roll..........

Rudy's country store and BBQ.
Been telling people this for years.

I would rank Rudy's brisket and ribs below quite a few other places I've had. The sausage I've had there was so rubbery, it was like eating a Goodyear tire. I think the dealbreaker for me at Rudy's was the side dishes:
A couple slices of Wonder Bread with your meal? Seriously? Couldn't you 'tards at least make some homemade bread.

The potato salad I got there was crunchy with little mayo and practically no eggs.

The peach cobbler was thick and doughy - my mom refuses to eat hers.

Not a fan of their creamed corn either. Seemed like they added a lot of sugar to it which should never happen. Creamed corn is sweet enough if your using good fresh corn. I'm guessing they use some cheapo canned Walmart store brand then added a bunch of sugar to cover up the taste.

Go for it!

I recommend special requesting the most overcooked flat cut portion of the brisket, and the creamiest portion of the creamed corn. ;)

Other than that, you're on your own.

The water was frozen to perfection.
Probably some of the best ice in central Texas.
If you do go to Rudy's I highly recommend the ice.

I'm not about to stand in line with a bunch of spoiled hipsters for hours on end to eat Franklin BBQ.
If all these people have had is stuff like Rudy's it's no wonder they think Franklin's is so good.

That sausage really is bad.
They sell breakfast tacos too and they would bring them to work.
I got the sausage and egg thinking it was breakfast sausage.
Nope it was that disgusting smoked rubber sausage.
Who on earth mixes smoked sausage with eggs for a breakfast taco.
And I guarantee it's left over from the day before.

Meyers BBQ in Elgin Texas was good a few years ago not for sure what it's like now.
They have a whole line of BBQ sauce and sausage they sell in the stores around here including HEB.
If I buy sausage at the store quite often it will be theirs.
the sauce ain't half bad either.

My son’s friend in Austin is from the western part of Ukraine. She came over shortly after the war broke out in her home country. She really loves BBQ and as I understand it they don’t do BBQ like we do over there. She’s been to Black’s BBQ in Lockhart and loves that. I’ll try and see if she’s been to Rudy’s.

One thing she’s told my son is we don’t do mashed potatoes correctly. I want him to find out the Ukrainian way for mashed potatoes. She really loves Borscht and often makes it. My son says it’s amazing. They use a lot of fresh dill in Ukrainian cuisine. Oh, and she says we do sausage wrong also. She doesn’t like the link sausage she’s had. I wonder what the right way is?

I like link sausage in general, but it must come with some texture. It can be a little greasy, but it must have some good chew and be anything else but the texture of Eckrich sausage. Eckrich sausage is a case study in doing sausage wrong.

You’d think if Prudhoe Bay was your post, the employer would have been more attentive to creature comforts. Or maybe the job market was tilted way in the direction of the employer back then.

That reminds me of some of the long gone, and long forgotten, restaurants from this area. You got a large glass filled with ice and little actual beverage.

I've been roped into going to Rudy's 3-4 times. For some reason, people visiting San Antonio from out of state always want to go there. I guess they think they're getting some "real Texas BBQ." Easily the worst sausage I've ever had. It's realllllllly bad.

There are so many great BBQ places in Worth's area (I think Lockhart is generally considered the BBQ capital of Texas) I would trust his judgement of BBQ.

There's another BBQ place we went to in the Round Rock area that was good.
I can't remember which one.
It was my friends birthday party and we went there and got a bunch of stuff.
It was either Smokey Moe's or poke e Joe's or some such thing.
Can't remember because we went to both and one wasn't open yet but the other one was.

All this talk about brisket had me buy one at the store.
2 something a pound.
But I'm not going to smoke it.

About BBQ.
I have never been a fan of pulled pork.
People will say oh but you have to try this one.
No I don't because it has nothing to do with one from the other.
Sauce or anything.
I don't like stringy meat.
Taking a pork roast and ripping it apart in long strings and dumping sauce in it is just not my thing.

I hate to see a properly smoked butt shredded as well. Actually, it burns me up..

I gently wiggle out the shoulder blade trying to disturb as little meat as possible. With the blade removed I pull a bun sized piece of flesh free and place the buttery soft whole muscle chunk on said bun working my way through the whole butt in the same manner. Sauce is not required, or mandatory but a good drizzle is not frowned upon either.

This guy cooked this thing in the oven.
It's gotta be the poorest excuse for a brisket I've ever seen in my life.
Look how dry it is and he goes along acting like it's the best thing since sliced bread.
That thing was as stiff as a board when he sliced it and the fat looks totally uncooked in the middle.
Might be the worst brisket on YouTube.
RIP poor brisket. :cry:
