AHHH, the smell of smoke

I've been craving ribs and today is the day. I also threw on a pork butt to use for pulled pork or slices, I haven't made up my mind yet. I'm also trying a new rub from Costco, it smells good and has big chunks of onion and garlic along with a few herbs.

I didn't want to look because of the title. I just knew that I would get myself into trouble if I peeked. Thank goodness it is a dark, dreary cold day here or I would be having to follow in your footsteps.
The next time that you are at Costco (and please do not go soon) look for McCormick Grill Mates Brown Sugar Bourbon. It's awesome on grilled chicken, and pork. Of course I always add a few more things to it including more Bourbon and Brown Sugar.

One hour in and it's time for a spritz, I'm using a local vinegar and apple juice.

I just tasted the small end piece I cut off the ribs and the flavor is awesome, I think this rub might be a winner!!

Dang it! I knew better than to click on this post! Now I'm getting the craving for 'Q again. Monday will be grocery day and I'll just have to see if there's anything in the meat case at the store. We're going at 7am when they open. Just maybe...

I smoked a fatty since the smoke was rolling which is a whole log of Jimmie Dean's breakfast sausage, it's great to keep in the fridge to use for breakfast. It slices good when chilled and a breeze to warm up in the M-wave. I just wrapped the pork butt and waiting for it to hit 165, it's 154 now.

It's time to knock the dust off those smokers and enjoy some fresh air, watching the fire is the original "Social Distantcing" from waay back!!

The pork is done, resting on the counter. I'll slice it up tomorrow for sandwiches and tacos.

I couldn't stand it and had to get a taste, this is gonna be good for sandwiches! I'm temped to make burnt ends out of it.
