That's another thing I've noticed they are breeding into the jalapeños - size. And, while they used to be breeding the heat out - mostly when they were more for poppers, than anything - I've noticed the heat coming back in them! Let's face it - hotter things are showing up all over! I also buy some jalapeños, because I only grow a couple plants, and I want a bunch at once, to pickle, but some didn't even have enough heat, several years ago. The places I get them now have been dependable, and for escabeche I like those pristine, large ones, that are usually there.
