No cookies yet, but soon...I've always thought this should be December 24th, not 4th, as I have baked all of them by then, and given away all the gifts of them by then.

I went to school with this dude and he's always been a lil 'out there' at times. I happened upon the channel last year and subscribed but rarely watch any of the channel videos in my feed until this peanut butter cookie recipe popped up a couple of weeks ago. This is a dandy soft peanut butter cookie!

I did substitute a half cup of leaf lard and a stick of butter for the cup of butter flavored Crisco and the cookies were absolutely awesome!

Here's a peanut butter crisp cookie that packs a lot of protein. Made up a few days ago... none left.

Combine: 1 cup ground whole almonds; 1 cup besan flour (chick pea flour); 1 cup unbleached flour; 1 cup rolled oats; 1 cup brown sugar; 1/2 tsp salt. Stir in 1/2 cup light olive oil and one beaten egg, then 1 cup peanut butter.

Spread the mixture in a papered 9X11 pan and stud it with 3/4 cup chocolate chips pressed in.
Bake at 350F for 30 minutes.
Cut into squares before it cools.

These cookies are completely crisp when cooled. Not super sweet but a hearty snack.

I like the sound of that, @bower! Not that I need another type of cookie to make. :lol:
