The fillet knife was the first of the set that I bought. I really liked it. Let me know what you think if you get one. These knives are not for everyday use but they sure are great for cutting things precisely, fast and thin.

Thanks for the reply, a good fillet knife is the only one I dont have.
Still tossing around the idea of what I want.
Or what I want to make.
Not like I cant fillet with the knives I have.

I probably have close to a hundred of them floating around the place.
The ones I use most often are made by Chicago Cutlery with walnut handles on them.
Pretty good stainless steel blades I can get and keep razor sharp.
The one I use most often is the boning knife with a thin 5 inch blade that is flexible.
I use it for all kinds of stuff from vegetables to meat.
The next one made by the same people is a small chefs knife with a 6 inch blade.
Last but not least same brand and make is a small paring knife with a skinny 3 inch blade.

Circa 1980's Henckels Four Star 8 inch Chef's Knife. Paid less than $20 on Ebay, very lightly used. It is incredibly sharp. No need to buy expensive new knives ever. Our rampant consumer culture provides copious amounts of used treasures for a song.

ETA... As with most things, Henckels now has many lines of knives (and other products), but their knives that are made in Germany with German steel are still top notch. They're just very expensive when you can buy a similar or better quality used example for much less online.

I encourage you to look into a used Victorinox fillet knife. They are ubiquitous in the restaurant industry and you can often pick up a used cast off for under $10 on EBay. They are almost certainly the best fillet knife you can buy in that price range (which is why they are the workhorse of so many restaurant kitchens).

A co-worker handed me a Henckels 4 star knife back in the 80"s to regrind.
It looked like it had been used to chop rocks.
They had got a whole set as a wedding gift.
Mind you this wasn't no home bench top grinder with cheapo grinding wheels.

I'm one of those weird people that bring my own kitchen knives and beer drinking glasses to other people houses if I intend to cook there which I used to do quite often.
Wife died and I became sort of a hermit.
I also learned not to let other people use my stones this was a hard lesson learned big time.
Took me awhile to fix it after the idiot put grooves in one.
It happened many years ago and I still get ticked off at the stupidity of it.

I gave a number of knives to Mom, since I needed something to use over there, besides that set of knives she still had, that was a wedding gift in '52! They probably were sharp at first, but the SS knives back then simply were not something you could sharpen. And if I found myself spending time in other's kitchens, that didn't have useable knives, I either took my stones over, or gave them some gifts, if the knives were like those things Mom used to have!
