Making Tomato Paste in Sicily

Found this fascinating. Imagine the concentration of that paste after processing.

Wow! I wonder how many jars that will fill? I would somehow save all that sauce dripping from the tables that first day. Either that or I'd sit on the ground underneath with my mouth wide open :)

Here is a bit more info. Folks make it at home in smaller quantities.

Read online about this bastardized version. You take a strained sauce and cook it down a lot. Spoon on tray and cook in your oven,
stirring occasionally until you get a thick paste. I guess it is an option if you don’t live in a dry Mediterranean climate.

I dont see any reason I cant do this in Texas in the summer.
Been thinking about it for years just haven't done it.

Besides humidity, the main reason that I would not even think about drying things outside like that is the birds flying overhead. :o

No racoons here (KOW), but squirrels all over. Just got my first one of the season last week.

I guess it would be full of insects here even before the animals got to it. :lol: You know they like it with extra protein. :twisted:
So it's not just the paste that looks amazing! Beautiful sunshine, clean wooden tables, no bugs... very, very nice. 8-)
