Darn it I miss the hand made onion rings they made at Players 24/7 at the end of the drag in Austin next to UT.

I'll see El Gordos onion pie and raise him one.
Well several.
List of ingredients but not measured.
Raisins.
Water.
Walnuts.
Coconut.
Butter.
Steens cane syrup.
Light brown sugar.
My homemade Apfelkraut, apple cider reduced to a black tart tar.
Sweet peppers.
A giant hand cut onion.
Allspice.
Nutmeg.
Five spice powder I'm trying to get rid of.
Real cinnamon.
Colve.
Black pepper.
A pinch of cayenne pepper and I mean just a pinch.
2 small hand diced potatoes I put in after the picture.
The coconut walnut thing is a frozen patty I made for future use as a cake frosting.
It doesn't have the egg in it yet nor will it.
At the very last before it goes in the pie will be my leftover ribeye steak fat and all that is still raw.
It's sliced and cut very thin.
Will also add flour.
Filling is much darker than the picture.

Here's the continuation of the onion pie.
I added some ginger paste flour and rice flour and after it cooled off I added a couple of egg yolks.
Added the meat and put in the pie plate.
Put a nice layer of Colby cheese on top.
Pie plate smeared with butter and dusted with flour.
The egg whites were brushed on top.
In the oven at 350°F.
The filling is friggin delicious if I do say so myself.
It's tart savory and a little sweet.
Tons of crazy flavors too.

Once this darn pie is out of the oven I'm heading off to get a really nice bottle of Port wine to go with it.

I texted the word "poker" to a buddy of mine in late May. "hey you ever play poker?" "Poker? like cards, no " Standard google text app.

My phone updated itself four weeks later. Didn't prompt me, just let me know that it installed 5 new game apps. Four of them were std deck card games, one of which was some sort of Poker.

But a "bad" Vidalia onion is still going to be far superior to a "bad" onion of the same variety, grown in Texas, or other places, in my opinion. I've been buying whatever Granex onions are available (Vidalias only for a few months of the year) in the local stores for a few decades, and trust my taste buds, nose and sometimes tearful eyes.

And, that Georgia grower that I mentioned is undercutting the Vidalia market, he ships his Granex onions, up here, a few weeks before the real Vidalias. I imagine that he plants a few weeks earlier than the others. The quality is still the same as the Vidalias, but the bulbs are consistently smaller.

Well anyone can grow a bad onion.
But if a farm grows good sweet onions in Texas then they have a bad year it won't be any worse than a bad onion in the Vidalia onion growing area.
Parts of Mexico and Texas has some killer sweet onions.
The big giant yellow or brown Spanish onion is to die for but they dried up in the stores years ago.
No idea what kind they are.
But I do have 3 onions I bought from the Mexican market that weigh 3 pounds 4 ounces.
They are light yellow.
One weighs 1 pound 4 ounces and the other 2 are a pound each.
Texas grown.


The ones I was talking about probably go from 2 to 3 pounds each and they are more brownish.

I found the walmart vidalias a few days back, same price as regular yellow onions, 4.48 for 3 lb, and yes grown in GA. I was a little confused earlier by that back and forth.

BTW that deep dish pizza looks absolutely terrible. I don't watch most youtubes people post, maybe it looks better in video, but that picture looks awful. Is that what chicago deep dish pizza typically looks like?

Yeah it looks terrible.
The darn crust is even burnt up.
You want good Italian food pasta grammar and Italian grandma cooks are about the only ones I watch.
