Why buy BBQ? I bought a Big Green Egg, used, a number of years ago when my youngest wanted a BBQ Thanksgiving. I used to get annoyed when I go and pay good money for BBQ and everything tastes the same. Now I do my own brisket, turkey on the Egg is simply amazing, and bone in pork roast wow. I don't cover my cooking with sauces, I am a dry rub type of gal. If I ever get to Austin to see the Congress Street bats, I would like to try Interstellar.

You can get some really good deals on the Big Green egg if you're willing to wait and watch out for them used.
I mean like pennies on the dollar.

I saw the bats coming back in the morning years ago at the Congress bridge.
I got to see the bats at Carlsbad caverns leaving in the evening too

620 is a parking lot during certain times of the day.
That's where Interstellar is at.

Valentinas BBQ moved from south Austin trailer to Buda into a big fancy place.
Then the trouble begins.
600 square feet to 6000 square feet.
This is the second person I know of that this has happened to.
Owing tons of money and can't even pay their help.

Tucked away in the middle of the Texas coastal plains is yet another BBQ place that is closing but will be brought back to life.
With the rising cost of meat it's getting really hard to sell cooked meat of any kind and stay in business.

It's getting much easier for home cooks to do what only commercial places did decades ago. Southern New England is not exactly the epicenter of BBQ, But, WalMart just started selling whole briskets (not corned beef briskets), here, this year. More easily available raw meat, along with the surge in small-sized smokers has made BBQ into an entertainment event, where friends and family gather for the day.

Notice the high prices for the cheaper meats to make up for the losses on the lower prices on the brisket.
No way should pork ribs be 30 dollars a pound.

Thumbs up for Don's BBQ on North I 35 in Austin between Woodward and Oltorf.
Prices reasonable and BBQ is good too.
I got the Texas special with point brisket sausage 2 sides and a drink for under 20 dollars.
No rubber sausage.
I was comfortably full.

I'm not able to eat as much as I used to so I get full rather fast.
I've found it cheaper to just find a good BBQ place and get my fix as opposed to buying a brisket and trying to eat it all myself.
I ran across some BBQ lamb in the freezer just yesterday looking for frozen okra.

This will be my first year, if the tomatoes come in, for experimenting with homemade BBQ sauce(s).

I already tried homemade ketchup, and forgot about the pot on the stove. My liquid reduction was 100%. :cry:

I was at a 4-H fair last night and ate from a food truck. It was clearly trying to give its meat smoke flavor from liquid smoke and it was so strong trying to eat it, it gave me a headache and made me gag. My husband was in the bathroom all throughout the night 😳😬
