Top Ten Favorite Foods.

I don't make some of these often but would be hard to imagine a life where I can't eat these again. Many are traditional Vietnamese dishes. In no particular order:
1. Bun Bo Hue (Spicy Beef Noodle Soup - which I much prefer over the popular pho)
2. Spring/summer rolls with peanut dipping sauce (the rice paper kind not deep fried egg rolls)
3. Thit kho (Vietnamese pork stew with hard boiled eggs)
4. Pork belly stir fried with shrimp paste - mam ruoc xao (pungent, salty, delicious)
5. Various instant ramen (If I'm a millionaire, I'll still eat instant ramen)
6. A medium-rare grilled hamburger.
7. Nachos (with guac and sour cream, please)
8. Pizza (anchovies and capers is #1 topping choice)
9. Custardy desserts (I'm cheating here, but too many to have to choose from)
10. Steak and mashed potatoes.
argh I have a bonus for PA Dutch fellows - SCRAPPLE. Hands down the best food discovery of my short life so far.

Boiled cabbage carrots and waxy potatoes with a good bratwurst.
Butter and bread.
A good fine grind white bratwurst seasoned with salt white pepper nutmeg and a little mace.
Not over cooked.
When in Germany we had this at the place we were staying.
One of those settings where all the food was set before everyone and they serve themselves.
Can't remember the name of the style.
Many of the university students I was with didn't care for it.
Needless to say I was stuffed.
Best meal in Europe.

Corned beef and cabbage or sauerkraut with potatoes and carrots.
Mom used to make her own corned beef and remember her doing it in a large bowl in the refrigerator.
This was made from farm raised beef.

Fried Chicken.
Back when I was a kid my family hired some young men I went to school with to haul our hay out of the fields.
They were teenagers and one of them went off to Vietnam after he graduated.
Never saw him again.
It was tradition in my family to feed the workers on our place when we had them there.
Dinner time on one of these days was fried chicken and all the fixings.
The chicken was raised on or place and there was a huge platter of it.
It was passed to one of the guys we hired and the platter broke in half right there at the table.

Meat pies.
I love the things.
Years ago I used to baby sit two little girls.
I had to entertain them fix their supper and put them to bed.
They were considered horrible brats by others but they loved me and so I took care of them.
One night one of them poured her tea in the chicken pot pie.
All fun and games till I told her to eat it or starve.
The other one thought it was funny.
I told her she had to eat it too.
Both were very unhappy.
After they both tried to eat it I took it away gave the other girls pie back and made another one for the girl that put tea in hers.
They never pulled that stunt again.
After supper we played hide from the monster.
I love the things.

My fav is sushi, specifically tuna the fattier the better as in toro. I lived in Japan between the ages of 10 & 18 but refused to eat sushi unless it had just cucumbers in it or something cooked like shrimp. Why? Because when I was growing up in Michigan my relatives would tell me the Japanese would grab a fish & eat it raw on the spot. That terrified & repulsed me. Seafood in Michigan especially in the 60s was not particularly fresh or tasty. So I expected sashimi to taste fishy & to be smelly.
As I prepared to leave for college in the USA I thought, heck why not at least taste this food that is so revered in this country I am about to leave? My brother had always loved the fact I wouldn't eat any, so there was more for him. Ok so I took the plunge...omg what is this heavenly food I could've kicked myself for 8 wasted years of opportunities to eat the best sushi in the world. This is why I always try to eat anything new that is offered to me. I might love it

Fried fish.
Too many fish stories to count but I have one.
It was years ago on the Pecos river at a place in the middle of nowhere called Pandale.
One of my co workers and I met another driller we were friends with in the West Texas oil fields.
We met at Pandale on the river way out close to Langtry Texas the home of Judge Roy Bean.
Big Bend country more or less, the place is beautiful.
JB our friend was way older than us and his fishing pole got drug in the river.
The next morning he got out in the river and snagged it with another pole.
There was still a 10 pound catfish on it.
We had to camp out on the ground by the fire and it was in the spring time.
The Hellgrammites were coming out of the water and starting to grow wings on the trees.
Never got to see this before in my life but they were everywhere hundreds of them crawling out of the river.
We all caught catfish and the three of us had fried catfish in a big cast iron skillet cook on a bed of coals from wood we collected with all the fixings and beer to boot.
Best 3 day weekend ever on the Pecos river.
Just so as you all know Pecos river catfish is the best I have ever had, there is something in the water that does it.

I'm going to do a total cop out cheat on the last one.
I'm calling it anything south of the boarder all the way to the tip of South America.
The variety of food is so vast it can cover anything from sandwiches to steaks with soups in between.
My first experience with this food was in Tijuana Mexico many years ago.
I wasn't afraid to eat anything and never got sick.
My favorite was the fresh raw shrimp marinated in lime juice.
You could get a cup of them and walk around with a drink enjoying all the sites and sounds of everything around you.
People were flabbergasted and said we were going to die.
Well I am still here and alive and kicking 40 year later.
I love the food, I love the culture and I love the people.
Buen provecho mi amigos y amigas.
I'm going to do a total cop out cheat on the last one.

I've been thinking about this and it's a hard question. But I at least have the top two for sure:
#1 - BBQ pork butt
#2 - BBQ ribs
Hmmm, I'm going to edit this and just say #1 is slow smoked pork. That will cover both of the above and any other porky thing like skewers, kebabs, pork belly, etc.

Can't say enough good about it.
One week I worked so many long days I had it every night with crackers.
One of my mom's favorites too.
There was a truck stop in town we used to eat at sometimes.
Back in the 60's.
She always got the homemade clam chowder.
Didn't see many trucks with sleepers back then.
And, in New England, it's called chowdah.
