@Shule I don't think it's sweetness I want. Not even sure how to describe it. More like tangy? Not overly sweet, but with some acidic flavor maybe?

Warmer soil should increase tart/acidic flavors in addition to the sugars. I'm not sure if that's what you're looking for, though.
