I've been going through this fish sauce pretty fast.
I'm using it as a salt replacement.

If you don't use it quickly, it's a good idea to refrigerate, as the flavor will deteriorate. I also keep oyster sauce, and Chenkiang vinegar refrigerated - two other ingredients that will be ok if used within a few months, but won't keep like soy sauce or Worcestershire sauce at room temp.

Since I don't tolerate hot peppers much, I did get seed for the no heat habanero's and bishops hats, all the flavors but not the punishing heat. Pretty good, nice to be able to taste the other flavors there not masked by the burning.

It's really depressing going into our local HEB these days.
40 dollars for a ribeye steak.

That and they're aren't through with the remodeling.
No meat counter or anything to get meat cut.

I end up refrigerating al my sauces. We dont have A/C and i dont use them fast enough. Red Boat is my favorite fish sauce.

Picked up a Picanha today at HEB.
Not that I'm out of frozen but getting low.
Against all Brazilian traditions I'm going to try and incorporate Thai flavors into the mix without getting stupid.
I figured if you only put salt on one in Brazil why not fish sauce or oyster sauce.
Maybe some ginger too.
Along with jasmine rice.
Still thinking about it since beef is too expensive to mess up.
Not that I'm out of frozen but getting low.

Maybe things have changed that much over the years, but I can say Peter Luger's used to be quite good, cooked perfectly, nice meat and sides, very good old fashioned service. Ate there several times when in NY, always worth it. Probably will not eat there again, but it's because I don't want to fly anywhere anymore, and I am a bit old for a road trip from Texas to NYC.

Not exactly a fan of him myself and don't hang on his every word as gospel.
But I saw the steak and it looked pretty bad no charing or whatever you call it on one side.
Anyway I cooked the last Picanha last night.
It had been marinating all week.
The meat was excellent.
